Description: Produced by Café Granja La Esperanza on the Potosi Farm, with 52 hectares dedicated to coffee, it's the biggest farm in the area. Aptly named Tres Dragones (three dragons) after their three mechanical driers set fire to the farmhouse in 2018. These super high scoring beans have been double fermented to bring plenty of funk to your cup! With a boldness and depth other processing methods might lack, it pitches an espresso or flat white that will make you double take for sure!

Cherries are harvested at peak ripeness and sorted via flotation to retain only the densest fruit. Brix levels are measured to assess sugar concentration before fermentation. A first 24-hour aerobic fermentation initiates enzymatic activity and sets the foundation for flavour development. Cherries then undergo a 72-hour anaerobic fermentation, enhancing complexity and deepening aromatic structure. Lastly they are dried in mechanical dryers at a steady 38 °C for 8–12 days. They are then stored in climate-controlled conditions at 18–19 °C to retain freshness and protect aromatic integrity.

    Process: Natural with dual fermentation

    Roast Level: Medium

Tasting Notes: Funky black forest, Baked apples, Fudge

    Origins: Colombia
