They are located in El Agrado, in the Huila department, in the south west of Colombia. Headed by Mr Gilberto Perez, it is his son, Danilo that took up the mantle to produce more experimental lots. The mountainous characteristics of Huila together with the climate are influenced by the Magdalena River and the two mountain ranges of the Andes, within which are several snow-capped volcanoes that provide the soil with mineral richness.\u003cbr\u003e\u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003eOnly fully ripe cherries are picked before the coffee is floated and hand sorted, ensuring any defects are removed. Anaerobic fermentation then takes place for 120 hours in sealed barrels which are turned daily to ensure a homogenous fermentation has occurred throughout, giving this fantastic coffee real depth of flavour.\u003c\/p\u003e\n\u003cp\u003eThe next stage is silo drying, controlled drying before sun exposure where the stability, sweetness and structure is fully developed. This drying process is completed over a total of 8 days, protecting aromatics and cup clarity.
